What is Kombucha?

Kombucha is a naturally carbonated fermented tea that’s packed full of probiotics, minerals and vitamins. It’s created from a fusion of sweetened tea and a specific culture known as “Scoby” – or “Symbiotic Culture Of Bacteria and Yeasts” if you’re feeling fancy.

Kombucha has been around for flippin’ ages, but it’s only in the last couple of decades that more people are cottoning on to the true benefits of gut health. This surge of information about probiotics, and experimentation with recipes has raised the awareness of this 2000 year old tasty tea.

Drink it because you like the taste, drink it because your ancestors may have drank it, drink it because it’s kind to your gut, or drink it because it’s pretty darn cool in 2020. No judgement here.

Why buy small?

If you’re thinking you’ve seen this before, you’re not wrong. Big companies and labels have a thing for kombucha too and make it by the masses. The trouble is, when you brew kombucha by the big-batch*, you leave out a whole lotta love that’s essential to the fermentation process. A lot of commercial labels pasteurize their kombucha to make it last longer once bottled, and to kill off any potential pathogens that may have contaminated the brew.

The problem is, when you pasteurize kombucha, you kill off the live cultures and any beneficial bacteria in there too. Which – if you ask us – sort of defeats the purpose of drinking kombucha.

Well, one of the purposes. Not sure if we mentioned, but it’s darn pretty tasty too. We never pasteurize our kombucha. Plus, you can be sure it’s totally safe, and crafted in-line with the highest safety regs.

*big-batch = technical term.
